Black Rice Vegetable Pulao
Ingredients:
- Black Rice – 1 cup
- Water – 2½ cups
- Onion – ½ cup, sliced
- Carrot – ¼ cup, chopped
- Green peas – ¼ cup
- Bell pepper – ¼ cup, chopped
- Green beans – ¼ cup, chopped
- Ginger – 1 tsp, finely chopped
- Cumin seeds – 1 tsp
- Bay leaf – 1
- Cinnamon – 1 small piece
- Cloves – 2
- Green cardamom – 2
- Turmeric powder – ¼ tsp
- Garam masala – ½ tsp
- Oil – 1 tbsp
- Salt – as required
- Fresh coriander – 2 tbsp, chopped
Method:
- Rinse the Black Rice thoroughly and soak it in water for about 30 minutes.
- Heat oil in a deep pan and add cumin seeds, bay leaf, cinnamon, cloves and cardamom.
- Add chopped ginger and sliced onion. Sauté until the onion becomes lightly golden.
- Add carrot, green peas, green beans and bell pepper. Cook for 2–3 minutes.
- Add turmeric, garam masala and salt. Mix well.
- Drain the soaked Black Rice and add it to the pan.
- Add water and bring to a boil.
- Cover and cook on low heat until the rice is tender and the water is absorbed. Add a little extra hot water if required depending on the rice.
- Allow it to rest for 5 minutes, then gently fluff with a fork.
- Garnish with fresh coriander and serve warm with raita or plain yogurt.
Black Rice Breakfast Bowl
Ingredients:
- Cooked Black Rice – ¾ cup
- Milk – ¾ cup
- Banana – ½, sliced
- Apple – ¼ cup, chopped
- Chia seeds – 1 tsp
- Almonds – 1 tbsp, chopped
- Pumpkin seeds – 1 tsp
- Honey or date syrup – 1 tsp
- Cinnamon powder – ¼ tsp
Method:
- Add cooked Black Rice and milk to a saucepan.
- Cook on low heat for 4–5 minutes until the rice becomes warm and slightly creamy.
- Add cinnamon powder and mix well.
- Transfer to a serving bowl.
- Top with banana, apple, almonds, pumpkin seeds and chia seeds.
- Drizzle with honey or date syrup.
- Serve warm as a filling breakfast bowl.
Black Rice Salad Bowl
Ingredients:
- Cooked Black Rice – 1 cup
- Cucumber – ½ cup, chopped
- Cherry tomatoes – ½ cup, halved
- Sweet corn – ¼ cup
- Bell pepper – ¼ cup, chopped
- Boiled chickpeas – ¼ cup
- Fresh coriander – 2 tbsp, chopped
- Lemon juice – 1 tbsp
- Olive oil – 1 tsp
- Roasted cumin powder – ¼ tsp
- Black pepper – ¼ tsp
- Salt – as required
Method:
- Allow the cooked Black Rice to cool completely.
- Add Black Rice, cucumber, tomatoes, sweet corn, bell pepper and boiled chickpeas to a large bowl.
- Add fresh coriander.
- In a small bowl, mix lemon juice, olive oil, roasted cumin powder, black pepper and salt.
- Pour the dressing over the rice and vegetables.
- Toss gently until everything is evenly mixed.
- Serve immediately as a colourful rice salad or meal bowl.
Black Rice Kheer
Ingredients:
- Black Rice – ½ cup
- Milk – 3 cups
- Jaggery – ¼ cup, grated
- Cardamom powder – ¼ tsp
- Almonds – 1 tbsp, chopped
- Cashews – 1 tbsp, chopped
- Raisins – 1 tbsp
- Ghee – 1 tsp
Method:
- Rinse the Black Rice thoroughly and soak for 30 minutes.
- Drain the rice and cook it with water until partially tender.
- Add milk and continue cooking on low heat until the rice becomes soft and the milk thickens.
- Add jaggery and mix well. Cook for another 2–3 minutes.
- Add cardamom powder.
- Lightly roast almonds, cashews and raisins in ghee.
- Add the roasted nuts and raisins to the kheer.
- Mix well and serve warm or chilled.
